ProMinent’s UV systems Dulcodes LP thin-layer offers effective disinfection solution

Liquid sugar syrup are very popular in the food industry and are used as the basis for many recipes. However, sugar syrup is particularly susceptible to spores, as well as yeast and mold.They need to be eliminated. Traditionally, this is done using heat pasteurization. Disinfection by means of UV radiation is a cost-saving alternative.

However, a process of disinfection using UV radiation is a cost-saving alternative. ProMinent’s UV systems Dulcodes LP thin-layer can disinfect up to 36 m3 of sugar syrup an hour.

UV disinfection is a proven way of rendering harmful micro-organisms in potable water and process water inactive. UV radiation kills up to 99.99% of all pathogens in transparent media. Thin-layer UV systems are a special form of UV system. Their construction makes them particularly suited to viscous media, such as sugar syrup. So, for example, when working to eliminate all germs from sugar syrup, energy can be saved by replacing pasteurisation with UV disinfection.

Most sugar syrups have a sugar content of 60-65° Brix. Conventional methods of pasteurisation use a heat exchanger and significant amounts of energy to bring the sugar syrup up to high temperatures, hold it here for long periods and thereby disinfect it. Pasteurisation cannot always adequately eliminate heat-resistant spores, while UV disinfection can kill off 99.99% of them.

Compared with this, the syrup can be disinfected at great speed by ultraviolet light without being heated up at all. UV radiation of 1,300-1,700 J/m is adequate to disinfect a warm solution of up to 40° C. UV treatment with UV systems Dulcodes LP thin-layer does not change quality, taste or appearance. Yet moving away from pasteurisation saves considerable amounts of energy and money.
